Is it possible to make the simultaneous interpretation during the call with jitsi?
And does jitsi have something like rooms for different users during one call?

Simultaneous interpretation is now possible - see this thread: Adjust volume levels via javascript - #15 by izakgl (but it still requires a pull request to be merged).
