Are you asking how to change an old Jibri to pass a new config file (e.g. jibri.conf)? You can check the launch.sh script in the repo: https://github.com/jitsi/jibri/blob/master/resources/debian-package/opt/jitsi/jibri/launch.sh. It passes a -Dconfig.file argument.
