I’m a developer and I’m an Italian teacher; I live in Italy. Is it possibile to disable Kick out option in student menu and leave this function only in teacher’s account? The same for mute everyone.

Yes, it’s possible but it will require having your own (self-hosted) server. Then you can adjust configuration as you wish.
Otherwise if you use some else’s server, such as https://meet.jit.si, you depend on how it’s been configured.
