No installation is required

I am asking when would you download
and install the meet jitsi software
on your computer?

When using jitsi-meet everything is encrypted between the clients and
the server. If there are just two participants, if possible they will
be connected p2p with full encryption between both.

How are the connections encrypted? Zero knowledge
encrypted connections?
Are the encryption keys created on the server or
on the computers which people audio and video from?

you can deploy your own server.

Can you direct me to instructions? Can a computer
act as meet jitsi server and client at the
same time?

When you make your own deployment(like meet.jit.si), with your own
domain and you own the video bridge which is routing the video.

When using jitsi-meet everything is encrypted between the clients and

There are plenty of articles about it, search for webrtc security or
webrtc encryption. http://webrtc-security.github.io/
It is a standard SRTP and DTLS.

Yes, a computer can be a client and a server, if it is capable of
running chrome for example.
