I only see a warning about the key of the repo:
Reading package lists... Done
Signature by key 040F57608F84BAF1BF844A62C697D823EB0AB654 uses weak
digest algorithm (SHA1)
The default installation when openjdk-8 is available, using internal
jetty from jvb to serve jitsi-meet is not working currently. Will
check it these days.
But if you do:
apt-get install nginx
apt-get install jitsi-meet
(not sure will it work in one command, cause meet will check whether
it is already installed).
Everything works fine.
