the project itself is not the product of a single outfit. It is a community

There is no hard set limitation in Jitsi so the answer is: as many as your
computer can handle. We regularly do Jitsi-related calls on development
topics with five or six participants and have no issues. Again, the exact
upper limit depends on your configuration.

It does actually. It can either host conferences itself or outsource them
