contacts have their VCARDs populated with the phone numbers that you'd
like to use with them. This would imply some server side work of course.

It is possible, you just need to use a SIP server that supports
messages, such as Kamailio for instance (http://kamailio.org).
Maybe if I could understand what appens when I add a ippi.fr account I could

Again, there's nothing specific with the ippi account. It's just that
they use a server that supports MESSAGE requests.
