OK, I'm just finding my way around the project components. I had a look at
the markdown docs for http, rest and rest-colibri here:
https://github.com/jitsi/jitsi-videobridge/tree/master/doc but I don't see
anything documenting an API where, given that I know the room name, I can
request the number of participants. Where can I find the documentation of
the API you mention?

I went digging in the videobridge code and found the REST API handler
implementation here:
https://github.com/jitsi/jitsi-videobridge/blob/c6acc4aea85c7984ab713ad19d54bc0fc8ac0aa4/src/main/java/org/jitsi/videobridge/rest/HandlerImpl.java
which seems to suggest that a GET against /colibri/conferences/{id} will
return some useful information. That wasn't clear to me from the
rest-colibri.md doc.
