Does it make a difference if you assign a host name to the local server
instead of using its IP address?.

You could try editing your hosts (or resolv.conf) file to add bogus host
names to the same server, ie

serveracct1 192.168.1.3
serveracct2 192.168.1.3
serveracct3 192.168.1.3

And then configure each account in Jitsi using serveracct1, serveracct2,
serveracct3 instead of the same IP address.

That would help debugging if the problem is in Jitsi code and using IP
addresses or if it's a connectivity problem.
