When I launch Jitsi, the Jitsi icon (or how should I call it) grabs the
screen and I can only wait until the launch process is finished--which
takes a fair bit of time. Is there anything I can to avoid the icon
from grabbing the screen?

Hi,

if you are talking about the splash screen, on linux we have added a
startup option: --splash=no, but this is not available on the other
platforms.
