Hello Alessio, I am also new to Jitsi, but I can answer your questions.
Jitsi meet will work on any linux server or VPS, but the simplest way to
deploy it is on Debian or Ubuntu, there is a simple guide in the download
section and you can get it running in a few minutes, the Jitsi meet package
contains all you need to have the full service running and will almost self
install and self configure.
The bad news is there is not much official documentation available to the
public, my recommendation is that you google specific questions, usually
there is an answer somewhere.
Just try the installation and if you have any question ask back here.
As per server loads and hardware requirements, I am precisely in the
process of finding out myself, maybe we can work it out together!
