I have been using Jitsi for awhile now and I'm looking to get my friends
on a safe encrypted alternative XMPP network to Google Talk. However, on
the homepage I read:
"In other words, this is where we test and experiment with all of
Jitsi�s new features."
Is this safe for personal usage? Paired OTR of course. As you can
imagine, this would be used for personal conversations and I'd rather be
safe than sorry.

I think the above is only meant to warn users that the app might be
unstable, in other words "it´s a work in progress, if it crashes don´t get
mad at us".

Do you know that it offers a Jingle Node relay? If not, and if your are planning on also using Jitsi for voice and video conversations then I'd recommend against it.
Using jit.si might lead to an occasional disconnection (currently we think that's about once every 4 to 6 months) but you'll have higher chances of going through NATs.
