I see the text "Enter name or number" in the dial field. My offline
contacts are hidden. When I show them, they appear below as well but
that's not my point.
If you want your offline contacts to be shown at any time just click on Tools/Show offline contacts.
I would like to sort my online contacts by status: Online, Do not
disturbe and Away.
It's weird there is no options for this in the Options dialog. When I go
in Tools -> Options -> Advanced -> Keybindings, there are some shortcuts
but none for sorting contacts
Currently contacts are sorted by two criteria: alphabetically and by connection status. All connected contacts (including online, away, dnd, on the phone, etc.) appear first in alphabetical order and then all disconnected (offline) contacts appear next again in alphabetical order. I'm not aware of a shortcut that would sort your contacts only alphabetically.

At least for me Offline contacts appear below contacts marked "Online"
or "Away". (Or the offline contacts are hidden via the Tools menu).
