Jitsi uses UDP, but does it connect directly between callers or is there
normally a server in the middle?

At least for XMPP it tries to establish a direct connection between
the parties.

It depends on what you mean by "connect directly", on the service you
are using, and on Jitsi configuration. Usually Jitsi connects to a
server used for "signaling" (e.g. SIP or XMPP) and uses this connection
to setup calls.

However, this does not necessarily mean that media goes through the
server. For media streams, Jitsi usually tries to establish a direct
connection and if that fails uses relays. But this is highly dependent
on the service.
