I need to update my Jitsi installation in order to resolve a problem with App Iphone users.
The actual version is 2.0.7648-1, but when I try to update with “sudo apt-get update” I have
Hit:20 https://download.jitsi.org stable/ InRelease
Is there a method to force the update to the 2.0.8044?
The following packages have been kept back:

You need to add the prosody repo as described in quick install guide.
