If I were to self host jitsi on AWS EC2 or some other could service, What are the limitations I’ll face?
Is there any limit to users that can connect or register stuffs like that?
The JaaS Dev says 25 monthly actives users for the free version? will I have these kinda limitations if I self host?

If you host your own server, you do not have those limitations. Currently, you can have up to 500 participants in a single Jitsi conference, with appropriate resources. So, you are basically limited by the resources you make available in your deployment. For Jitsi, your most important resource is bandwidth - that’s likely to take a hit before the physical infrastructure.
