Your doc states I can pin an endpoint like this:

    "colibriClass": "PinnedEndpointChangedEvent",
    "pinnedEndpoint": "charlie@somewhere.com/chat-1234"
}

How can I switch back to the normal mode, where Jitsi dynamically selects the most dominant speaker?

You can send a pin request with an empty endpoint field to clear it.

The bridge doesn't dynamically select dominant speakers. It only indicates
them to clients and clients select them.
