But, I don't quite know how they're supposed to work. I tried
running the latest from there just by clicking on it from the
Finder, but it aborts with "No java found!". Same goes if I dig
into the app bundle on the command line, like so:
$ export JAVA_HOME=/System/Library/Frameworks/JavaVM.framework/Versions/1.6/Home/
$ /Applications/Jitsi.app/Contents/MacOS/Jitsi
2015-02-08 19:24:26.731 Jitsi[14921:707] No java found!
Perhaps you're supposed to edit the plist?
