1- Unfortunately, I didn't note which day it happened.
2- Tools > Options : Apart from the accounts, I don't remember making
any changes, and thus I don't know if something was lost.
3- Logs: Advanced -> logging -> [Archive Logs]
I will e-mail offlist because it's too big.
I am thinking perhaps it's a fluke because I had started a second
instance of Jitsi by accident. Although I just tried to start a second
instance of Jitsi, and it just bring back the first one (which is a
good thing but invalidates my theory)

No, this is not normal. We'll need more information such as the
version from which you updated and the version to which you updated
that made your accounts and passwords disappear, whether the update
erased all your preferences (e.g. if prior to the update you had any
preferences changed in Tools > Options, did they disappear as well),
any logs that may give hints to the origin of the problem...
