It’s possible (with quite a bit of work) to get a basic Jitsi Meet setup working with ejabberd. You can pretty much use the Prosody config as a guide for how you need to configure ejabberd.
However, the functionality that is implemented with Prosody modules (eg lobby, breakout rooms, token auth) would have to be rewritten from scratch as ejabberd plugins if you want to use that functionality.
