Do Jitsi team have any plans to support Quic for any suitable parts of the solution in the near future? It seams to be quite promising to solve transport latencies.

We follow the standards, so if a better way to do things becomes available we’ll adopt it / contribute.
Most of the Jitsi traffic is media, and media over QUIC is not a thing yet, it’s being talked about / worked on.
Loading assets via HTTP3 likely won’t have a big impact in meeting performance.
