I am new to Jitsi and just need support with the link to where I can buy a Jitsi VPS hosting plan or their pricing list to set up a server with them. Can anyone help please.

I am not aware that 8x8 sells VPS hosting for Jitsi, they provide accounts on their own servers as part of their commercial service.
I don’t know of other providers, but Digital Ocean does have Jitsi Meet among its ready-to-go VPS setups. See :
