I am using docker to self host jitsi through Self-Hosting Guide - Docker · Jitsi Meet Handbook
I would like to customize the toolbar images. I know the images are present under jitsi-meet/images at master · jitsi/jitsi-meet · GitHub, but since I am not cloning the whole jitsi-git, can I do it through code?
Still waiting for a response on this. How exactly do I proceed with this?
Which images are you trying to replace? Do you mean the button icons on the toolbar?

Yes exactly, the button icons on the toolbar. How do I do this? I am using docker - https://github.com/jitsi/docker-jitsi-meet
As far as I know, it is not possible to customise those icons without recompiling Jitsi Meet. Same applies whether you use docker-jitsi-meet or install from apt packages.
To change it, my best guess is you’d change the references here or just replace the associated svg files then recompile.
… but I’ve never tried, so I could be mistaken.
