We deploy JITSI App on our corporate mobile devices. It would be nice to deploy also a basic configuration for both plattforms.

We don’t have support for that on iOS.
On Android we support setting the server URL from RestrictionManager: android: add serverURL configuration for MDM/EMM environments · jitsi/jitsi-meet@4b1743b · GitHub
Extending it to support display name and email would be acceptable, should you want to submit a PR.
