I use a PC-W3 camera from AUKEY. It shows me an aspect ratio of 16: 9. How can I switch to 4: 3? (In zoom you can change it under »Settings«.

No, this is not configurable on the frontend in Jitsi.
I think you might be able to change it in your phone settings though. Check the video settings on your phone, there might be an aspect ratio option there.
