Is it possible to configure interface_config.js or config.js to

  • Generate alpanumeric unuiqe meeting string instead of random words
  • Disable the ability to write your own meeting name, only “Start meeting” button

I don’t think you can do that without changing the code and building your own app.

Alternatively, you could write a different web app to be the official landing page of your site and disable the built-in welcome page.
